The premium 6-month-aged Dürr Classic cheese is a signature hard cheese with no equivalent in Russia. It has a pungent flavour with spicey herbal overtones and a firm, eyeless texture. The product is easy-melting and perfect for making various sauces, fondues, raclette, salads, pizza or pasta.
Inspired by Austrian Bergkäse cheese, Dürr Classic cheese is made using state-of-the-art cheesemaking technologies with Brevibacterium Linens for natural maturation of smear-ripened cheeses. The growing colony of B. linens forms a sticky coating on the cheese surface, which imparts orange colour to the rind and unique full-bodied flavour to the cheese. The product is manufactured exclusively from EkoNiva Grade A cheese milk from own dairies selected based on 29 parameters at Shchuchye cheese plant in Liski district, Voronezh oblast.

In January 2022, the 6-month-aged Dürr Classic hard cheese was granted 3 stars out of 3 at the Superior Taste Award in Brussels (International Taste Institute) with a score of 93.4 out of 100.
According to experts, this cheese goes well with medium-bodied red wines, such as Valpolicella, Chianti, Barolo. It can also be served with white wines from France's Jura and Alsace, wines from Austria and Spain. This cheese will perfectly complement hot and cold dishes: the flavour of coarsely grated hard cheese on top of a risotto will enhance the taste of the rice, and its texture will add creaminess; in a salad served with arugula and hazelnut oil, the cheese will add extra richness to the blend. The 6-month-aged Dürr Classic hard cheese also pairs well with acacia honey, Williams pears and crusty sourdough bread accompanied by white wine.
