Momente aus Schollbrunn semi-hard cheese (which translates as ‘Memories from Schollbrunn’ from German) is inspired by the childhood memories of Stefan Dürr, EkoNiva Group President. His grandparents, who lived in Schollbrunn village, Baden Württemberg, introduced their grandson to dairy farming. They owned a small farm and a café. As a boy, the future founder of EkoNiva used to spend a lot of time there, helping out on weekday evenings and weekends. The café was famous for its simple but delicious dishes – the creamy cheese with a nutty flavour was always on the table.
We produce Momente aus Schollbrunn semi-hard cheese using the best traditions of cheesemaking and a unique recipe. The pedigree cows consume the nutritious fodder made from the crops grown on the black fertile soils near the river Don. The cows produce high yields of raw milk, which is selected based on 29 parameters. The Grade A cheese milk is what gives Momente aus Schollbrunn semi-hard cheese its unique taste. It is a creamy flavoured cheese with nutty undertones. It is moderately elastic, has uniform consistency and texture. The pattern consists of angular shaped eyes evenly spaced throughout the cheese.
This semi-hard cheese is perfect to eat on its own and makes a delicious addition to appetizers, salads, sandwiches or canapes. It forms a delicious golden crust when baked in the oven, so it is ideal for making cheese contsaining sauces and dishes, such as julienne and lasagne.
