Inspired by Swiss Appenzeller, Dürr Zeller is made using state-of-the-art cheesemaking technologies with Brevibacterium Linens for natural maturation of smear-ripened cheeses. The growing colony of B. linens forms a sticky coating on the cheese surface, which imparts orange colour to the rind and unique full-bodied flavour to the cheese. The product is manufactured exclusively from EkoNiva Grade A cheese milk from its own farms selected based on 29 parameters at Shchuchye cheese plant in Liski district, Voronezh oblast.
